When you're crunched for time, think focaccia sandwiches! I've got lots of sandwich filling suggestions below so that you can change it up each time you make it.
But it doesn't get any easier than using tender & juicy rotisserie chicken. The combination of fresh spinach, juicy chicken, creamy avocado, sweet red peppers and rich provolone all work fantastically together to create a deliciously satisfying sandwich.
Use any flavor of focaccia that you prefer. I used my sourdough focaccia with rosemary because I can't stop eating it, but that's a story for another day.
Wrap your sandwiches in foil and take yourself on a picnic this summer, but don't forget the cabbage slaw and rice krispie bars!

- Rosemary, garlic, or onion focaccia - With its soft & chewy texture, focaccia is a great bread choice for making sandwiches.
- Fresh spinach - My go-to option when I want leafy greens that are packed with fiber, vitamin C, and potassium. You could also substitute arugula or kale for a similar flavor.
- Roasted red peppers - Adds natural sweetness along with a complex flavor from roasting.
- Cooked (or rotisserie) chicken - Besides being tender and juicy, rotisserie chicken can make life so much easier when you don't have a lot of time for meal prep.
- Avocado - A great plant-based fat alternative to butter and/or oil; smash avocado with a fork instead of slicing it, and spread it on your sandwich after adding the mayo.
- Provolone or mozzarella cheese - Two great mild and soft cheese options, but you can use your favorite cheese here. Pepper jack cheese would be delicious!

- Garlic. If you don't use garlic focaccia, add 1 minced clove of garlic to your mayo before spreading it on your sandwich.
- Hummus. Add a smear of hummus for extra garlicky, smoky flavor.
- Italian seasoning. Add ½ teaspoon of Italian seasoning to your mayo (or make your own Italian seasoning) for a tasty blend of Italian flavors.
- Tomato. Substitute two slices of tomato for the roasted red peppers.
- Grill your sandwich to turn it into a panini (try making it using ciabatta rolls!)
- Substitute basil aioli for the mayonnaise for a basil-forward sandwich.

Cut focaccia pieces in half horizontally and place cut side up on cutting board.
Spread mayonnaise on all four halves. On one side of each sandwich, layer spinach, red peppers, chicken, avocado, and mozzarella. Season to taste with salt and pepper.
Add tops to both sandwiches and cut in half.
