    Easy Focaccia Sandwich with Chicken and Avocado

    No need to spend money on a gourmet sandwich when you can easily make your own focaccia sandwich at home in just 5 minutes. Featuring rotisserie chicken, creamy avocado, roasted red peppers, and fresh spinach, this sandwich is perfect for a quick, healthy, and satisfying meal.

    When you're crunched for time, think focaccia sandwiches! I've got lots of sandwich filling suggestions below so that you can change it up each time you make it.

    But it doesn't get any easier than using tender & juicy rotisserie chicken. The combination of fresh spinach, juicy chicken, creamy avocado, sweet red peppers and rich provolone all work fantastically together to create a deliciously satisfying sandwich.

    Use any flavor of focaccia that you prefer. I used my sourdough focaccia with rosemary because I can't stop eating it, but that's a story for another day.

    Wrap your sandwiches in foil and take yourself on a picnic this summer, but don't forget the cabbage slaw and rice krispie bars!

    ⭐️ Why This Sandwich Is The Best

    • Ready in 5 minutes
    • Garlicky, creamy, chewy, slightly sweet, and tangy
    • Excellent way to use rotisserie/shredded chicken
    • Healthy and nutritious; high in protein; uses healthy fats; full of vitamins and minerals
    • Perfect for a picnic or day at the beach!

    🥑 Ingredient Notes

    • Rosemary, garlic, or onion focaccia - With its soft & chewy texture, focaccia is a great bread choice for making sandwiches.
    • Fresh spinach - My go-to option when I want leafy greens that are packed with fiber, vitamin C, and potassium. You could also substitute arugula or kale for a similar flavor.
    • Roasted red peppers - Adds natural sweetness along with a complex flavor from roasting.
    • Cooked (or rotisserie) chicken - Besides being tender and juicy, rotisserie chicken can make life so much easier when you don't have a lot of time for meal prep.
    • Avocado - A great plant-based fat alternative to butter and/or oil; smash avocado with a fork instead of slicing it, and spread it on your sandwich after adding the mayo.
    • Provolone or mozzarella cheese - Two great mild and soft cheese options, but you can use your favorite cheese here. Pepper jack cheese would be delicious!

    📝 Variations & Substitutions

    • Garlic. If you don't use garlic focaccia, add 1 minced clove of garlic to your mayo before spreading it on your sandwich.
    • Hummus. Add a smear of hummus for extra garlicky, smoky flavor.
    • Italian seasoning. Add ½ teaspoon of Italian seasoning to your mayo (or make your own Italian seasoning) for a tasty blend of Italian flavors.
    • Tomato. Substitute two slices of tomato for the roasted red peppers.
    • Grill your sandwich to turn it into a panini (try making it using ciabatta rolls!)
    • Substitute basil aioli for the mayonnaise for a basil-forward sandwich.

    🔪 How To Make a Focaccia Sandwich

    Cut focaccia pieces in half horizontally and place cut side up on cutting board.

    Spread mayonnaise on all four halves. On one side of each sandwich, layer spinach, red peppers, chicken, avocado, and mozzarella. Season to taste with salt and pepper.

    • Storage: Place leftovers in an airtight container in the refrigerator for up to 3 days.
    • Temperature: You can use warm or cold rotisserie chicken, depending on your preference.
    • Wrap it up. To bring sandwiches along on a picnic (or to take to work), wrap in foil and store in a cooler or refrigerator for up to 24 hours ahead of time.
    • Feed a crowd. You can double, triple, or even quadruple this recipe!

    🍽 How To Serve Focaccia Sandwiches

    For a hearty meal, pair your sandwich with sweet potato fries or baked beans

    For a lighter lunch, serve with apple salad, or gazpacho

    Don't forget dessert! Finish your meal with marshmallow cookies or peach crisp.

    Change up your sandwich fillings by using these suggestions:

    • bacon, lettuce, & tomato (a.k.a. BLT!)

    Do you eat focaccia hot or cold?

    It can be eaten at either temperature. If snacking on it, I recommend eating it warm. For making sandwiches, they can be served at any temperature.

    What does focaccia go with?

    Excellent side dishes include roasted squash salad, roasted brussels sprouts with garlic, and fennel salad.

    How is focaccia traditionally served?

    Warm focaccia is often served as a snack, or sliced and used to make sandwiches.
