    This crispy BBQ tofu sandwich is built like a cutlet sandwich: thick slabs of extra-firm tofu are pressed, pan-seared until deeply golden, then glazed with spicy BBQ sauce in the skillet so it caramelizes and clings. Pile it onto toasted vegan brioche (or any soft bun) with crunchy cabbage slaw for the perfect sweet-spicy-crispy bite. It's an easy lunch or weeknight dinner in about 35 minutes.

    The trick is slicing tofu into two thick "steaks" and letting them sear untouched; no breading required to get a solid crust! Serve it with my vegan baked beans or baked zucchini fries for a tasty meal.

    • Extra-firm tofu - This type of tofu has the least amount of moisture, so it holds up well when it's cooked. It also has a meaty texture that becomes nice and crispy when frying. Try it in my vegan tofu scramble or stir fry with tofu!
    • Spicy bbq sauce - Use your favorite brand of spicy barbecue sauce, or mix ¼ cup bbq sauce with 1 teaspoon hot sauce or Sriracha for a nice kick.
    • Brioche-style buns - I like the soft texture of brioche-style buns, and they work well with the meaty slab of tofu here, but you could also serve them on my ciabatta rolls.
    • Quick Cabbage Slaw - This is a really easy and dairy-free coleslaw that pairs perfectly with bbq!

    📝 Air Fryer Instructions

    For an air-fryer tofu sandwich, preheat your your air fryer to 400 degrees F. After draining, brush each side of tofu with olive oil and cook for 7-8 minutes, or until crispy. Flip tofu slices and cook for another 7-8 minutes.

    🔪 How To Make a Crispy BBQ Tofu Sandwich

    Drain the tofu, and wrap it in a double layer of paper towels. Place it on a plate, weigh it down with a heavy skillet, and let it drain for 10-15 minutes.

    After tofu has drained, slice it lengthwise into 2 thick pieces. Place on a large plate and season with salt and pepper.

    Heat oil in a large skillet over medium-high heat until oil starts to shimmer, about 3 minutes.

    Carefully add the tofu slices to the pan, being careful not to splatter the hot oil. Sear until the tofu becomes golden brown and crispy. **Try not to touch the tofu for at least 5-6 minutes. This will help it develop a nice crust. Flip the tofu and continue to cook until crispy and golden brown on the opposite side, about 5 minutes.

    Combine the cabbage slaw ingredients while the tofu cooks. Set aside.

    After the tofu has cooked until crispy, lower the heat to low and add the bbq sauce. Flip the tofu once to coat it evenly with the sauce. Let it caramelize for one minute in the pan, then remove from heat.

    Toast the buns and assemble sandwich: Place tofu slices on toasted buns and top with cabbage slaw and vegan mayo, if using. Serve immediately.

    • Add some leafy greens, like spinach, kale, or arugula
    • Ramp up the tangy flavor and add extra crunch with pickled red onions
    • Add a thick slathering of spicy mayo

    • Press it (even if just briefly). A quick press helps the tofu brown instead of steaming, resulting in a crispier crust.
    • Slice thick for a "filet" bite. Two thick slabs hold up on the bun and stay crispy longer than thin slices.
    • Hot pan; don't touch. Let the tofu sear undisturbed until deeply golden before flipping; moving it too soon prevents a crust from forming.
    • Add BBQ sauce at the end. Toss/brush it on after the tofu is crisp so it caramelizes and clings. Adding it too early can burn or make the tofu soggy.
    • Toast the bun. A quick toast adds crunch and helps protect the bread from sauce and slaw juices.

    💬 Frequently Asked Questions

    Why won't my tofu get crispy?

    If your tofu isn't getting crispy after frying it for 5-6 minutes, try turning up the heat slightly, and try not to move the tofu around in the pan. This will help it get crispy.

    Can I bake the tofu instead?

    Yes! Bake the tofu slabs on a parchment-lined baking sheet at 425ºF for 25-30 minutes, flipping halfway, until browned and firm. Then brush/toss with BBQ sauce and return to the oven for 3-5 minutes so the sauce caramelizes. (For maximum crispiness, you can broil for 1-2 minutes at the end, but watch very closely.)

    What's the best tofu for sandwiches?

    Extra-firm tofu is the best option, as it holds together, presses well, and sears up nicely. If you can find super-firm tofu, it's even better (less water, quicker crisping) and often doesn't need much pressing. Avoid soft or silken tofu; they won't hold up in a sandwich.

    Can I make this ahead?

    Yes, this is a great make-ahead sandwich! Cook the tofu, cool, and refrigerate it separately from the sauce and slaw for up to 3-4 days. Re-crisp the tofu in a hot skillet (or air fryer) until warmed and crisp, then add BBQ sauce at the end so it stays sticky, not soggy. Assemble right before serving.

      So good! I've never thought to cut the tofu into 2 thick slices before, but it really makes a meaty sandwich! I didn't have spicy bbq sauce, so I added a splash of hot sauce. The crunchy coleslaw really makes it a standout sandwich! 10/10!
