🍄 Ingredient Notes

- Portobello mushrooms - I recommend using portobellos for this taco recipe, as they are the meatiest variety of mushrooms, and will hold up well when roasted. However, cremini (baby bella) mushrooms would work just as well. Be sure to try my portobello mushroom fajitas and vegetarian blt!
- Apple cider vinegar - This gives the spice rub a little bit of zing! You could also use white wine vinegar as a substitute.
- Cumin, ancho chile powder or smoked paprika, and garlic powder - This combination of warm Mexican spices is used for your mushroom rub, and it adds lots of complex flavor.
- Corn or flour tortillas - I prefer corn tortillas for tacos, but you can use corn or flour tortillas. Just be sure to warm them up in the oven or give them a nice char over an open flame before serving.
- Avocado - Adds rich creaminess. If you aren't a fan of avocado, add a smear of mayo or a drizzle of olive oil.
- Pickled red onions - They're so easy to make, and they add a nice zippy crunch!
- Cotija cheese or Mexican blend cheese - I like a nice salty Mexican cheese on these tacos, like cotija or queso fresco.

🔪 How to Make Portobello Mushroom Tacos

Prepare the mushrooms:
Preheat the oven to 400 degrees F and line a baking sheet with parchment paper.
In a medium bowl, whisk together the olive oil, apple cider vinegar, maple syrup, salt, cumin, chile powder/paprika, and garlic powder.

Use a damp cloth to remove any dirt, and remove the mushroom stems. Slice mushrooms (about ¼" thickness) and add to seasoning mixture. Toss to coat all of the mushroom slices really well.
Spread mushrooms onto the lined baking sheet so that they are flat, not overlapping or crowded.

Roast the mushrooms for 20 minutes, until they have shrunk down and have browned.
At this point, if you want to warm the tortillas in the oven: wrap them in foil, place on a small baking sheet, and heat in the oven for 10 minutes. Or, if you have a gas stovetop or grill, you can char them for a few seconds on each side.
Assemble tacos:

Arrange the tacos with mushroom slices, lime juice, avocado, pickled onions, cabbage, cilantro, cheese, and jalapeño. Serve immediately.

- Don't steam the mushrooms: Roast in a single layer; if your sheet pan is crowded, use two pans. Better browning results in better flavor and a "meatier" texture!
- Skip rinsing: Wipe mushrooms with a damp towel so they brown instead of getting waterlogged.
- Storage: Store leftover taco ingredients in an airtight container in the refrigerator for up to 4 days. Wrap tortillas in foil and store in the fridge.
- How to reheat tacos: Reheat the roasted mushrooms in the microwave for 1 minute. The tortillas can be wrapped in foil and warmed in a 350 degree F. oven for 10 minutes. When tortillas and mushrooms are ready, assemble tacos with your preferred toppings.

There's no right or wrong way to serve tacos, but I love pairing them with other favorite Tex-Mex foods. Here are a few suggestions:
- Chunky black bean salsa
- Easy 4 ingredient guacamole

- Optional but elite: drizzle with a chipotle-lime crema. (Combine 2 tablespoons Greek yogurt or mayo, 1 teaspoon lime juice, ½ teaspoon chipotle/chili powder, & a pinch of salt.)
