    Creamy Mustard Dill Salmon

    Take your dinner to the next level with this mustard dill salmon. This easy recipe combines the richness of salmon with tangy mustard and herby dill, creating an elegant dish that's delicious, impressive, and healthy. Ready in just 20 minutes, serve it with a side of roasted vegetables or rice for a mouth-watering meal.

    I love the versatility of salmon - there are a million different ways to prepare it (like my salmon with miso butter, spinach salmon, and salmon with gochujang sauce), and one of my favorite flavor pairings is with spicy mustard and fresh dill - the perfect foil for rich salmon.

    This is a very low effort recipe, but you can easily fool your guests with the beautiful presentation!

    🐟 Ingredient Notes

    • Greek yogurt - Use a thick and tangy Greek yogurt for optimal flavor and creaminess.
    • Fresh dill - I always recommend using fresh herbs whenever possible. However, you can substitute 2 teaspoons of dried dill for fresh dill.
    • Salmon - Depending on where you shop, salmon can be pricey. Wild-caught salmon is always the best, but I've purchased farmed salmon many times and it always tastes great.
    • Garlic - I highly recommend using fresh garlic for optimal flavor, but jarred garlic will work as well.

    📝 Variations & Substitutions

    • Yogurt. Use your favorite brand of yogurt, although it won't be as thick as Greek yogurt.
    • Mustard. I love a grainy and textured mustard, but you can use whichever type of mustard you prefer.

    🔪 How To Make Mustard Dill Salmon

    Make dill mustard sauce: Whisk yogurt, dill, mustard, scallions, salt, and pepper in small bowl to blend. Let stand at room temperature for 30 minutes.

    Preheat oven to 425°F. Place parchment paper on baking sheet.

    Place salmon, skin side down, on prepared sheet. Sprinkle with garlic, salt and pepper. Bake salmon until just opaque in center, about 10-12 minutes. Drizzle ⅓ cup of sauce on salmon and serve remaining sauce on the side. Garnish with additional scallions and fresh dill.

    👩🏼‍🍳 Expert Tips

    • Storage: Place leftovers in an airtight container and store in the refrigerator for up to 4 days.
    • How to freeze: Transfer completely cooled salmon to a freezer-safe container and freeze for up to 3 months. Freeze your sauce separately. To thaw, place in fridge overnight.
    • How to reheat salmon: Gently reheat in the microwave, using the 30% power setting (3 or 4 will work) for 30 seconds on each side. Using the highest microwave setting may dry out your leftover salmon. Or read my post on the best ways to reheat salmon!
    • Use fresh dill. Since both mustard and dill are star players here, it's important to use fresh dill if possible.
    • Don't overbake. Salmon thickness varies, but aim for 4 to 6 minutes per half-inch of thickness. You could also use an instant-read thermometer to check for doneness. The USDA recommends a minimum internal temperature of 145 degrees F. at the thickest part of the fillet.
    • You can eat the salmon skin. It's actually very nutritious, so if you want to eat it, go for it! Baking salmon with the skin on also prevents the fillets from drying out while baking.

    • Pair it with vegetables, like asparagus, sweet potatoes, or baked beans
    • Serve it with your favorite grain, like rice, quinoa, or farro
    • Serve it with bread, like my ciabatta sandwich rolls
    • Pair it with creamy mashed potatoes

    💬 Frequently Asked Questions

    How to make salmon without drying it out?

    Salmon thickness varies, but aim for 4 to 6 minutes per half-inch of thickness to prevent drying it out. You could also use an instant-read thermometer to check for doneness. The USDA recommends a minimum internal temperature of 145 degrees F. at the thickest part of the fillet.

    What happens if you don't rinse salmon before cooking?

    No need to rinse your salmon before cooking it.

    Do you bake salmon covered or uncovered?

    Salmon can be baked either way. What's more important is to pay attention to the bake time and internal temperature to prevent it from becoming overcooked.

    Ingredients
      

    • ¾ cup Greek yogurt
    • 2 Tablespoons fresh dill, chopped
    • ¼ cup Dijon mustard
    • 2 scallions, thinly sliced
