After developing several vegetable fritter recipes, I've learned that crisp fritters depend on two things: controlling moisture and using only enough batter to hold the vegetables together.
These fritters have crisp edges, tender centers, plenty of sweet corn, sharp cheddar, and a spicy jalapeño kick. They can be made with fresh, frozen, or canned corn for an easy appetizer, side dish, or light meal.

Ingredient Notes
- Corn: Fresh gives the most distinct pop and usually contains less surface moisture. Frozen should be fully thawed and dried; canned should be thoroughly drained and dried.
- Jalapeño: Removing the seeds makes the fritters milder; jalapeño heat varies.
- Cheddar cheese: Sharp cheddar gives more flavor without requiring an excessive amount. Based on my recipe testing, freshly shredded cheese provides the best texture.
- Flour: The batter should hold the corn together without burying it in a pancake-like coating.
- Oil: Use a neutral oil with a high smoke point, like vegetable oil, for frying
- Lime: Adds bright citrus flavor and balances out the richness.
How To Make Jalapeño Cheddar Corn Fritters

Prepare the corn. Thaw or drain when necessary, then dry thoroughly.

Mix the batter. Combine the dry ingredients, then add the wet ingredients, and mix well. The finished mixture should be thick and scoopable rather than pourable.

Pan-fry the fritters. (Air fryer and oven instructions are provided in recipe card below). Flatten each scoop slightly and cook in batches until deeply golden on both sides.
Expert Tips for Crispy Corn Fritters
- Remove excess moisture. Frozen or canned corn can loosen the batter if not drained properly, and can make the fritters steam.
- Keep the batter corn-heavy. Use only enough binder to hold the kernels together.
- Preheat the skillet and oil. The fritters should begin gently sizzling as soon as they enter the pan.
- Flatten them slightly. Thick mounds can brown outside before the centers cook.
- Cook in batches. Crowding lowers the skillet temperature.
- Place on a wire rack after frying. Stacking hot fritters traps steam and softens their crust.
Storage & Reheating

- Refrigerate cooked fritters in an airtight container for up to 4 days.
- Freeze in a single layer before transferring them to a freezer container. Freeze for up to 3 months.
- Reheat in an air fryer, skillet, or hot oven rather than the microwave for optimal crispness.
What To Serve with Fritters
Serve them with sour cream, spicy mayo, hot honey, or guacamole. To make them a light meal, add a watermelon salad or pair with salmon with gochujang sauce.

Jalapeño Cheddar Corn Fritters Recipe
Ingredients
- ½ cup whole-wheat flour
- 1 teaspoon baking powder
- ¼ teaspoon garlic powder
- ¼ teaspoon ground cumin
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 large egg, beaten
- ¼ cup milk
- 2 Tablespoons cilantro, chopped
- zest of 1 lime
- 1 teaspoon fresh lime juice
- ½ cup grated cheddar cheese
- 1 jalapeño, diced (remove the seeds for milder fritters)
- 1 green onion, chopped
- 1 cup fresh corn kernels (1 cob), or frozen corn that's been thawed & drained
- vegetable oil, for frying
Instructions
- In a medium bowl, whisk together the flour, baking powder, garlic powder, cumin, salt, and pepper.
- Add egg, milk, cilantro, lime zest and juice, cheese, jalapeño, green onion, corn, and stir just until combined. The finished mixture should be thick and scoopable rather than pourable. Add more milk if the batter is too thick, or more flour if they're too thin.
Skillet Method
- In a large skillet, add 2-3 tablespoons of oil and warm over medium heat. Once the oil is hot, use a ¼ measuring cup to portion the fritter batter into the hot skillet.
- Cook for 2-3 minutes or until the underside of fritters starts to turn golden brown. Using a spatula, flip fritters and gently press down to flatten them. Cook for another 2-3 minutes, until cooked through.
- Transfer cooked fritters to wire rack to drain excess oil. Repeat with remaining batter.
- Serve warm with dipping sauce of your choice.
Air Fryer Method
- Follow recipe instructions to make the fritter batter. Next, place heaping tablespoonfuls of batter into your air fryer, and use the back of the spoon to flatten a bit.
- Depending on the size of your air fryer, you should be able to make 2-4 fritters at a time. Cook in air fryer at 375°F for 10 minutes, until cooked through and golden and crispy on the outside.
Oven Method
- To bake fritters, follow recipe instructions to make the batter, then scoop fritter batter onto a parchment-lined baking sheet, brush with oil, and bake in a preheated 400º F. oven for 25 minutes. Let cool for 5 minutes and serve warm.
