If you're not familiar with Sriracha, it's a fermented Thai hot sauce made from chili peppers, distilled vinegar, garlic, sugar, and salt. It's my preferred hot sauce because it's both garlicky and not too spicy, so I can put it on anything and everything!
To make this sriracha aioli recipe (also called "Asian spicy mayo"), we simply combine mayonnaise, sriracha, lime juice, and garlic for a creamy, tangy, and spicy condiment or dipping sauce.

💬 What is Aioli?
Traditionally, aioli was an emulsion of olive oil and garlic that featured heavily in Mediterranean cuisine.
However, more modern versions of aioli are very similar to mayo, as they are made with either store-bought or homemade mayonnaise, and seasoned with garlic as well as other flavors like herbs, spices, or even hot sauce.

- Mayonnaise - You can use full fat or low-fat mayonnaise here, but the full fat mayo will have a richer flavor.
- Sriracha chili sauce - A fermented Thai hot sauce made from chili peppers, distilled vinegar, garlic, sugar, and salt. Use it to make spicy deviled eggs!
- Fresh lime juice - I highly recommend using fresh-squeezed lime juice for optimal citrus flavor, although store-bought lime juice will work as well. Alternatively, lemon juice can be substituted for a similar citrus flavor.
- Garlic - Using fresh garlic is always the best way to go when you want intense garlicky flavor, but jarred garlic or garlic powder will do the trick as well.

- Make it spicier. You can make this creamy sriracha sauce as spicy as you prefer by adjusting the amount of Sriracha hot sauce added to it.
- Make it sweet. Add a touch of sweetness by adding ½ teaspoon of honey or maple syrup.
- Vegan option: Substitute plant-based/vegan mayo to make this a vegan dipping sauce.

Add all ingredients to a medium bowl and whisk together until well combined, about 1 minute. Store in an airtight container in the fridge for up to 5 days.

- How to freeze: Transfer sauce to a freezer bag and store in the freezer for up to 3 months. To thaw, place in refrigerator overnight. If your aioli separates, give it a few whirls in a blender or food processor to re-emulsify it.
- Make ahead: Make sauce and store it in the refrigerator for up 3 days ahead of time.
- Let it mingle. If you have time, chill your sriracha aioli sauce in the fridge for 1 hour to let the flavors hang out and intensify before serving.
