⭐️ Why You'll Love This Italian Chickpea Soup
Ready in 30 minutes: An easy, one-pot dinner made with simple pantry ingredients.
Full of flavor: A combination of Italian herbs, fennel, garlic, and fresh lemon gives this soup its savory, aromatic flavor.
Hearty and satisfying: Chickpeas provide plant-based protein and fiber, while plenty of vegetables make this a filling meal.
Great for meal prep: This soup keeps well in the refrigerator and freezes beautifully.
🍅 Ingredient Notes and Substitutions

- Onion, celery, carrots, & garlic: These vegetables create a flavorful, aromatic base. Finely chop the carrots and celery so they cook quickly and evenly.
- Italian herbs & fennel: Oregano, thyme, rosemary, and fennel give this soup its distinctive savory flavor. If using fennel seeds instead of ground fennel, lightly crush them before adding them to the pot.
- Garbanzo beans (chickpeas): Canned chickpeas make this soup quick and convenient. You can substitute approximately 3 cups of cooked chickpeas if using dried beans. Be sure to cook dried chickpeas before adding them to the soup.
- Diced tomatoes & vegetable broth: Create the savory, tomato-based broth. Choose low-sodium broth if you'd like more control over the seasoning.
- Spinach or kale: Both work beautifully. Spinach wilts almost immediately, while kale needs a few additional minutes to become tender.
- Fresh lemon juice: Stir it in right before serving to brighten the broth and balance its savory flavors.
🔪 How to Make Garbanzo Bean Soup
*See the recipe card below for printable instructions.
In a large pot or Dutch oven, heat the olive oil on medium-high until it shimmers. Lower the heat to medium and add the onion; cook for 3 minutes.

Add the garlic, carrots, celery, oregano, thyme, rosemary, fennel, bay leaves, salt, and pepper, and cook for an additional 5 minutes.

Pour in the chickpeas, diced tomatoes, and vegetable broth and stir. Bring the soup mixture to a boil, then lower the heat and simmer for 15 minutes. Add the spinach or kale and cook it for another minute, until it's wilted.

Add fresh lemon juice, stir, and season to taste with additional salt and pepper if necessary. Remove bay leaves, divide soup into 4 bowls, and garnish with fresh parsley (if using).

👩🏼🍳 Tips For The Best Italian Chickpea Soup
- Build flavor from the beginning. Sautéing the vegetables with the dried herbs and fennel before adding the liquid helps release their aromas and creates a more flavorful broth.
- Make it thicker. For a thicker, creamier soup without adding dairy, blend or mash about one-third of the soup before adding the greens. Stir it back into the pot, adding a splash of broth if necessary.
- Adjust the seasoning at the end. Taste your soup after adding the lemon juice. Depending on your vegetable broth, it may need a little more salt or another squeeze of lemon.
- Pair your garbanzo soup with my easy no knead ciabatta rolls for dipping into the broth.
Storage & Freezing
Refrigerate leftover soup in an airtight container for up to 3-4 days, or freeze for up to 3 months. Thaw overnight in the refrigerator and reheat gently on the stovetop, adding a splash of vegetable broth if necessary.

Thanks so much, Kerry! I really like idea of puréeing half of it for a thicker consistency – I'll have to try that!
