Equipment

  • large pitcher

Ingredients

  • 1 lemon, thinly sliced
  • 1 large cucumber, thinly sliced
  • 1 (2-inch piece) fresh ginger, peeled and thinly sliced
  • 8 cups water

Instructions

  • Place sliced lemon, cucumber, and ginger in a large pitcher and add 8 cups of cold water (or distribute evenly among 8 glasses).
  • Let the water sit at room temperature for about 1 hour to let the flavor develop. Serve with or without ice cubes.

Notes

  • Storage: Store in the refrigerator for up to 2 days with the fruit and ginger still in the pitcher. For longer storage, strain out the cucumber, lemon, and ginger after 12 hours and refrigerate the infused water for up to 4 days. If the water tastes bitter, flat, or off, discard it and make a fresh batch.
  • Slice everything thinly. Thin slices expose more surface area, so the water picks up flavor faster.
  • Use fresh ginger. Ground ginger will make the water cloudy and gritty, so fresh ginger is best.
  • Strain for longer storage. Lemon peel can turn bitter as it sits, so strain out the cucumber,
