Healthy Peach Crisp

Healthy peach crisp is plump full of juicy, bubbly peaches, with a crispy oat topping that's naturally sweetened with maple syrup. This easy and healthy peach dessert is dairy-free/vegan, flour-less, and protein-rich. Simpler than making a pie, and no special equipment is needed. Bring it to your next summer picnic, potluck, or bbq!

Ingredients

For the filling:

  • 6 ripe peaches, peeled, pitted, and sliced
  • 2 Tablespoons cornstarch or arrowroot powder
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • 1 Tablespoon fresh lemon juice
  • 3 Tablespoons maple syrup

For the crisp topping:

  • 1 cup old-fashioned rolled oats
  • 1 cup almond flour
  • cup brown sugar
  • ¼ teaspoon salt
  • ¼ teaspoon ground cinnamon
  • cup vegan butter, softened
  • 1 teaspoon vanilla extract
  • ¼ cup chopped almonds (optional)

Instructions

Prepare filling:

  • Preheat oven to 350 degrees F. Prepare a 8x8" baking dish with non-stick cooking spray.
  • Peel peaches (use this hack for easier peeling) and place in a large mixing bowl.
  • Add cornstarch, vanilla extract, almond extract, lemon juice, maple syrup, and stir to coat peaches.

Prepare Crisp Topping:

  • In a small bowl, whisk together oats, almond flour, brown sugar, salt, and cinnamon.
  • Add softened vegan butter, vanilla extract, and almonds (if using), and combine with a fork, until soft clumps form.
  • Pour peach filling into prepared baking dish and sprinkle with crisp topping. Use your hands to pat down lightly.
  • Bake for 35-40 minutes, until crust is golden brown. Let it rest for at least 15 before serving to allow the juices to thicken. Serve with ice cream or whipped cream.

Notes

  • How to store: Cover and store in the refrigerator for up to 4 days.
  • How to freeze: After completely cooled, transfer to a freezer-safe container and store in the freezer for up to 3 months. To thaw, place in the refrigerator overnight.
  • How to reheat: Cover with foil and place in a preheated 350 degree F. oven for 10-15 minutes, until heated through.
  • Use ripe peaches to ensure peak juiciness.
