Ingredients

  • 2 pieces (4"x5" each) rosemary, garlic, or onion focaccia
  • 2 Tablespoons light mayonnaise
  • ½ cup fresh spinach
  • ¼ cup roasted red peppers, thinly sliced
  • ½ cup cooked (or rotisserie) chicken
  • ½ avocado (peeled, pitted, and sliced)
  • 2 slices provolone or mozzarella cheese
  • salt and pepper

Instructions

  • Cut focaccia pieces in half horizontally and place cut side up on cutting board.
  • Spread mayonnaise on all four halves. On one side of each sandwich, layer spinach, red peppers, chicken, avocado, and mozzarella. Season to taste with salt and pepper.
  • Add tops to both sandwiches and cut in half.

Notes

  • Storage: Place leftovers in an airtight container in the refrigerator for up to 3 days.
  • Temperature: You can use warm or cold rotisserie chicken, depending on your preference.
  • Wrap it up. To bring sandwiches along on a picnic (or to take to work), wrap in foil and store in a cooler or refrigerator until ready to eat.
  • Feed a crowd. You can double, triple, or even quadruple this recipe!
