Mustard Dill Salmon Recipe

Ingredients

  • ¾ cup Greek yogurt
  • 2 Tablespoons fresh dill, chopped
  • ¼ cup Dijon mustard
  • 2 scallions, thinly sliced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 4 (4-6 ounce) salmon fillets
  • 1 clove garlic minced

Instructions

  • Make the sauce: Whisk yogurt, dill, mustard, scallions, salt, and pepper in small bowl to blend.  Let stand at room temperature for 30 minutes.
  • Preheat oven to 425°F. Place parchment paper on baking sheet. You could also use a large baking dish. 
  • Place salmon, skin side down, on prepared sheet. Sprinkle with garlic, and a pinch of salt and pepper. Bake salmon until just opaque in center, about 10-12 minutes. Drizzle ⅓ cup of sauce over salmon and serve with remaining sauce on the side. Garnish with additional scallions and fresh dill.

  • Storage: Place leftovers in an airtight container and store in the refrigerator for up to 4 days.
  • How to freeze: Transfer completely cooled salmon to a freezer-safe container and freeze for up to 3 months (freeze sauce separately). To thaw, place in fridge overnight.
  • Don't overbake. Salmon thickness varies, but aim for 4 to 6 minutes per half-inch of thickness. You could also use an instant-read thermometer to check for doneness. The USDA recommends a minimum internal temperature of 145 degrees F. at the thickest part of the fillet.
